Cheese: nominalização em texto normativo (C1)

Protected designations of origin were designed to defend small producers and have become, in places, an instrument of exclusion. The intention was defensible. A name built over generations has commercial value, and without legal protection that value is captured by whoever can print the word on a wrapper. Yet the ___ of local practice into legal definition requires decisions that were never made before: which pasture counts, which breed of animal, which starter culture, which minimum period of ageing. Whatever is written down becomes orthodoxy, and whatever was omitted becomes illegal. Producers whose families made the cheese for a century have found themselves outside the specification because their herd or their altitude fell on the wrong side of a line drawn by a committee. The regulation therefore preserves a tradition by freezing it, which is the one thing living traditions never do. Defenders reply that a frozen tradition is preferable to none, and the market suggests they are winning the argument.
