Traditional hard cheese is a technology for storing summer in a form that survives winter. Milk that would spoil in two days becomes a wheel that keeps for two years, and every step in the process exists to control which microorganisms thrive. ___ by hand twice a week and washed with brine, the rinds develop a dense surface that protects the paste while allowing it to breathe. Industrial production has reproduced much of this chemistry with starter cultures and controlled humidity, and the results are safe, consistent and cheap. What is lost is harder to price: the microbial character of a particular cave, and the livelihoods of mountain farms whose economics only work when milk becomes cheese on site rather than travelling to a distant factory.
